From the moments of our arrival at Tortola, when Jim greeted us in the tender we knew we were in the hands of someone who enjoys people. Jim, so positive and so organized and so pleased to be at service. Special skills such as Jims are rare. It has been a great pleasure to have had your guiding light around this time. What a terrific person and chef is Amanda. Caring, positive, and aware, Amanda does not miss a thing. A chef extraordinaire. Just watch out if you intend to cut down on your food intake-Amanda’s cooking is irresistible! Thanks Jim and Amanda, you’re a formidable duo.
